Ingredients
- 3 cups overnight cooked rice
- 4 Norwegian Atlantic Salmon portions
- 5 eggs
- Salt
- Scallions
- 1 Shallot
- 2 tbsp sambal
Instructions
Fried rice:
In a large bowl, add the cooked white rice, egg yolk and mix well until rice is well coated On medium-high heat, cook the rice until the grains separate then season with a pinch of salt. Make a space in the middle of the pan then add shallots, scallions, egg whites, and sambal crunch. Stir fry for a minute. Continuously stir fry with all the ingredients combined for another 2-3 minutes.
Salmon:
Cut into 1-inch cubes and season with salt. On medium-high heat, add about 3 tbsp of neutral oil. Once the oil is heated, add the salmon and fry until all edges are golden and crispy.
