Ingredients
- 1/2 cup milk
- 1/2 cup Mexican shredded cheese mix
- 2 tbsp chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp bagel seasoning
- 1 bell pepper medley (red, yellow, green), chopped
- Cooking spray
For the Sauce:
- 1/4 cup mayonnaise
- 1 tbsp hot sauce
For the Topping:
- 2 packs Atlantic Salmon Happy Fish (prepared according to package instructions)
Instructions
Preheat to 375°F (190°C). Whisk together eggs, milk, cheese, parsley, salt, pepper, and bagel seasoning. Spray a non-stick cupcake tray with cooking spray. Place chopped bell peppers in the bottom of each mold. Pour egg mixture into molds and bake for 12 minutes. Carefully remove from tray and cool quiches for 10 minutes. Mix mayonnaise and hot sauce, then drizzle over quiches. Top each quiche with a baked salmon happy fish. Enjoy warm!
