Ingredients
- 4 oz Blue Circle Smoked Salmon
- 6 oz cream cheese (or 4 oz cream cheese, 2 oz Greek Yogurt)
- 2 tbsp small capers drained
- 1/2 medium red onion diced
- 1 tbsp Italian Parsley chopped
- salt and pepper to taste
Instructions
- Layer smoked salmon slices on a lightly oiled aluminum foil, overlapping slightly
- If using yogurt, mix with cream cheese until it reaches a smooth consistency
- Add the chopped onion, parsley and capers to the cream cheese mixture
- Taste and season with salt and pepper as needed
- Place a thick line of the cream mixture along the long side of the salmon
- Roll up the salmon carefully with the help of the aluminum foil as you would a sushi roll
- Chill in the refrigerator for several hours (or overnight) to firm up the roll
- To serve, slice the salmon roll with a sharp knife into 1/2 inch long pieces
- Place rolls on a serving plate and garnish with additional capers on each roll
